- Minimum alcohol level: 11.5% for Bianco; 12.0% for Grechetto, Rosso, and red varietals; 12.0% for Passito (16.0% potential); 12.5% for all Superiore wines
- Aging: For Grechetto Superiore, minimum 5 months (ERD = April 1, V+1); for Grechetto Passito, minimum 10 months (ERD = September 1, V+1); for Rosso Superiore, Merlot, and Sangiovese, minimum 12 months (ERD = November 1, V+1); for Merlot Superiore and Sangiovese Superiore, minimum 18 months (ERD = May 1, V+2)
