Significant Production Rules:
- Zone of production: Designated communes in the coastal provinces of Grosseto, Livorno, Lucca, Massa Carrara, and Pisa
- For Vendemmia Tardiva, grapes cannot be harvested until October 15
- For red wines, enrichment by the Governo method (refermentation of wine with dried grapes) is allowed until November 30
- Minimum alcohol level: 9.0% for Passito (16.0% potential); 11.0% for Rosato and Novello; 11.5% for Bianco; 12.0% for Rosso; 12.0% for Vendemmia Tardiva (15.0% potential)
- Aging: For Bianco and Rosato, minimum approx. 3–4 months (ERD = January 1, V+1); for Rosso, minimum approx. 3 months (ERD = February 1, V+1); for Vendemmia Tardiva and Passito, minimum approx. 2–4 months (ERD = March 1, V+1)
