- Spumante must be fermented in autoclaves (pressurized tanks)
- Minimum alcohol level: 10.0% for most wines, except 6.0% for Moscato Giallo spumante (11.0% potential), 9.0% for Moscato Giallo frizzante, 10.5% for nonaromatic spumante (11.0% potential), 11.0% for Novello, and 16.0% potential for Passito
- Residual sugar: Spumante wines can range from secco (dry) to dolce (sweet)
