SPARKLING WINES

- Negroamaro Rosato Spumante (RoSp): Minimum 85% Negroamaro + OARG
Significant Production Rules:
- Rosato production requires 12–24 hours of maceration before pressing
- Spumante wines may undergo second fermentation either in bottles or in autoclaves
- Minimum alcohol level: 11.0% for Bianco and white varietals; 11.5% for all spumanti; 12.0% for Rosato, Rosso, and red varietals; 12.5% for Riserva
- Residual sugar: Maximum 10 g/l (1.0%) for all wines except Novello and spumanti; 30 g/l (3.0%) for Novello (the disciplinare does not specify whether this is a minimum or a maximum); spumanti can range from extra brut to extra dry
- Aging: For Riserva, minimum 2 years (ERD = November 10, V+2)
