Significant Production Rules:
- For Passito, grapes must be dried on or off the vine to achieve a minimum sugar level of 210 g/l (21.0%) and can be pressed only between November 1, V, and March 30, V+1
- Minimum alcohol level: 11.0% for Rosso; 12.0% for Superiore; 13.0% for Passito (15.0% potential)
- Aging: For Rosso, minimum approx. 1–2 months (ERD = December 15, V); for Superiore, minimum approx. 10–11 months (ERD = September 1, V+1); for Passito, minimum approx. 1 year (ERD = December 1, V+1)
