- Wine is transferred into barrels for Sherry-style aging in March, V+1
- Minimum alcohol level: 15.0% for Bianco; 15.5% for Superiore and Riserva; 16.5% for Liquoroso
- Aging: For Bianco, minimum approx. 29 months, including 2 years in barrel (ERD = March 1, V+3); for Superiore, minimum 3 years in barrel (ERD = March 1, V+4); for Riserva, minimum 4 years in barrel (ERD = March 1, V+5)
