Significant Production Rules: 

  • Vineyard elevation: Various limitations apply to different grape varieties for Superiore only
  • Grapes for Vino Santo must be dried on or off the vine to achieve a minimum potential alcohol level of 16.0%; those for Vino Santo Superiore cannot be pressed before March 1, V+1
  • Grapes for Superiore Vendemmia Tardiva must be left to dry on the vine to achieve a minimum sugar level of 250 g/l (25.0%)
  • Minimum alcohol level (Trentino): 10.0% for Vino Santo (16.0% potential); 10.5% for Nosiola and Riesling Italico; 11.0% for Bianco, Sorni Bianco, Chardonnay, Moscato Giallo, Müller-Thurgau, Pinot Bianco, Pinot Grigio, Riesling Renano, Sauvignon, dual white varietals, Rosato, Sorni Rosso, Cabernet, Cabernet Franc, Cabernet Sauvignon, Lagrein, Marzemino, Merlot, Rebo, and dual red varietals; 11.5% for Traminer Aromatico, Rosso, Pinot Nero, and all white riservas except Rosso and Pinot Nero; 12.0% for Rosso Riserva and Pinot Nero Riserva; 15.0% (potential) for Moscato Rosa
  • Minimum alcohol level (Trentino Superiore): 11.0% for Moscato Rosa, Vendemmia Tardiva, and Castel Beseno Passito (15.0% potential); 11.0% for Vino Santo (18.0% potential); 12.0% for Nosiola, Moscato Giallo, Müller-Thurgau, and Riesling Renano; 12.5% for Bianco, Chardonnay, Pinot Bianco, Pinot Grigio, Sauvignon, Traminer Aromatico, Rosso, and red varietals except Moscato Rosa
