SPARKLING WINES
- Spumante (WhSp): Any proportions of Chardonnay, Pinot Bianco, Pinot Meunier, and/or Pinot Nero
- Rosato or Rosé Spumante (RoSp): Any proportions of Chardonnay, Pinot Bianco, Pinot Meunier, and/or Pinot Nero
- Millesimato (vintage-dated Metodo Classico)
- Riserva (Spumante, Rosato Spumante)
Significant Production Rules:
- Wines must undergo second fermentation in bottles (Metodo Classico)
- Minimum alcohol level: 11.5% for Spumante and Rosato Spumante; 12.0% for Riserva
- Residual sugar: Spumante and Rosato Spumante can be at any sweetness level, from brut nature (zero dosage) to dolce; Riserva can range only from brut nature to brut
- Aging: For nonvintage Spumante and Rosato Spumante, minimum 15 months on the lees (ERD = April 1, V+1); for Millesimato, minimum 24 months on the lees (ERD = January 1, V+2); for Riserva, minimum 36 months on the lees (ERD = January 1, V+3)
